Choco-Cranberry Cookies

So this recipe is incredibly quick and easy to follow which makes more time for enjoying the cookies with a nice cup of tea once they are fresh out the oven and have had a bit of cooling time (resist the urge to eat one immediately your burnt mouth will not thank you for it). 

200g Softened butter

300g Caster sugar

1 egg

325g Self raising flour

Chocolate chips (not in the photo.. oops)
Dried Cranberry fruit

Pre heat your oven to 200°c 
Cooking time: 10 - 12 minutes

Method: 

Measure out the caster sugar and the softened butter using your scales and add them into your mixing bowl. Mix the two ingredients together either by using a mixer or the old fashioned way with a wooden spoon (work those arm muscles) and do this until it's creamy. Add an egg to the mixture and continue to mix that in. 

Weigh the flour and then use your sieve to gradually add the flour and mix as you go along. Now it's time to add the chocolate chips and the cranberry pieces, use a wooden spoon to fold them into the delicious cookie dough. Lay grease proof paper on an oven tray(s) and apply half a handful sizes of dough onto the tray(s) (don't worry too much about the sizes, just as long as they have spaces between them so that they don't stick together).

 Pop your cookies into the oven for 10 -12 minutes, Keep an eye on them as you don't want any burnt edges! 

Ideally you want the cookies to have golden edges and lighter middles which will give you that crunchy outside with a gooey centre! You can always make the mixture go further by splitting it up into smaller sized dough pieces and on reflection we wish we'd added more chocolate.. because who can ever have enough chocolate!
